Castle Rock Dairy is a wonderful example of a Farmstead operation in the upper Midwest. They write, “We have been certified organic since 2000, with approximately 500 acres of cropland. The organic dairy herd of 125 Holstein/Jersey-cross cows was added in 2003, with the bottling facility added in 2005. At present we bottle nonhomogenized, low-temp, vat-pasteurized, cream-line milk and make a premium quality ice cream. By feeding the soil properly and allowing crops to feed on enriched soil, our animals become servants, passing on essential nutrients to consumers. Our glass bottled milk and premium quality ice cream bring back the taste of times gone by. We do not pool our milk, giving us total control of the product from start to finish.” |
